When Nishio closed a year or so ago, it left a hole in the ramen scene. Who would step in? Who would take over this tiny shop in the north of Tokyo.

Kabo-chan to the rescue. Completely self taught, Kabo is just a dude who loves ramen.

With some guidance from Nagi, he has created a niboshi-rich shoyu ramen for this tiny six-seater shop. The menu is just two deep; ramen and an egg.

He should add extra chashu to that menu, it was really good. Crusty outside and tender inside. Tons of flavor.

Good luck Kabo-chan!
