むぎとオリーブ (Mugitooribu in Ginza)

This is it folks. The hottest new shop in Tokyo! And, like another recent winner - Kagari - this one is in Ginza as well.

I've been many times (as of 2016), and even made a video for Japanese TV. Check it out!

I'll be honest, when I first heard that Mugitooribu was "clam ramen", I was skeptical. Sure, clams are often used to flavor soup, but putting it up there on your shop's board is a bit bold.

Boy was I wrong. Don't even doubt this one in the least. And don't worry, this isn't Clam Ramen with a capital C, more like perfection with many amazing points, one of which is the clams.

Before we get to the signature dish, the mazemen is worth mentioning. Mazemen is all about the noodles and, in this case, the egg. The noodles are sourced from a famous Kyoto noodle maker, and that egg is known as the best in Japan. The same one you can find at Apple Basic, this egg is almost neon orange in color. And before you make some offhand nuclear disaster remark, that color is all natural.

But the real draw is the triple soup. One part chicken broth, one part niboshi broth, and one part clam broth. All tied together with a deep shoyu tare.

This is a balance to rival anything out there. Mega-deep impact with a smooth, clam-flavored aftertaste.

Topped with copious amounts of clams, chicken chashu, a fish cake knot (?!?), and fried potato.

Expect lines, but so far they haven't reached the length they should be at.
