つなぎ (Tsunagi in Ebisu)

Tsunagi is fairly new on the scene, exactly one year ago at the time of slurping.

New, but very well regarded. The concept here is thick miso with homemade noodles. And though that is nothing new, Tsunagi drops in a healthy, or unhealthy depending on your views, serving of seabura in the mix. Seabura, pork back fat.

With a slightly sweet blend of six types of miso, this is a flavor-rich bowl.

If you aren't getting enough stimulation from the sweet broth, chewy noodles, and silky back fat, go ahead and add some sansho, Chinese numbing pepper.

Great stuff, and all those toppings (extra pork, egg, extra nori) only cost an extra 200 yen. That's a steal!

Unique bowls like this are gems. While most miso ramen can be expected to taste a certain way, Tsunagi goes for something unique, and really brings it.

Nice! How do you specify how much Seabura you want in your bowl?

To get a lot of something, you can add 多い (oh-ee). To get less 少し (su-koh-shee).

Brian, I was wondering if you could start writing about which button on the machine you push for the bowl pictured and reviewed for your devoted followers who do not speak or read enough Japanese go in headstrong and attain the perfect bowl. Many times I have gone in to a shop you recommend and end up with something totally different, it is generally still pretty good though. I live in Nishiazabu and walked on over to Tsunagi yesterday. Do you ever go into a shop and upon being confronted by the ordering machine feel like having something totally different than intended? This happened to me yesterday. I intended to get the bowl you pictured but upon arrival was in the mood for some heat. If you order the highest level of spice here, I feel like it is even hotter than the bowl over at Kikanbo and the flavors are still fantastic despite the overwhelming fire in your mouth.
