TETSU, the famous shop in Nishi-Nippori, deserves to be on my best-of list. Maybe.
It has been quite a while since I went back to that original, lunchtime-only ramen shop for their fantastic tonkotsu-gyokai blend soup. Their perfect noodles. Their inventive red-hot rock (used to reheat the soup once it gets a little cool).
Since I was first blown away by TETSU's tsukemen, they have transformed into a massive chain of shops. The road to success runs many routes. Some winners tend to stick with one or two shops. Others, like TETSU, have opened more shops than I can count on my hands, plus a whole bunch of TETSU-produced offshoots.
This branch of TETSU, right next to bustling Urawa Station, keeps the lunch formula the same. However, being a branch that is obviously about making money, they stay open an extra 12 hours. They also change their PM soup. If you come when the sun is down, the pork is gone, and chicken is in.
The tori-gyokai nighttime soup? I'm not a fan. All those features that makes pork an excellent culinary adjective just don't work with chicken. If creamy, chickeny goodness works for you, then check this one out. If creamy, porky goodness is more appealing, give this a miss.
