How can such a simple looking bowl be up there in many reviewer's top ten lists? Just soup and noodles, nothing more.
Sure, they offer a nikusoba option, a bowl with a bit of chashu on top, but the recommended option, the one that everyone goes for, it is just soup, noodles, and a scattering of chopped green onion.
At Ito, it is all about that soup.
So much so that they have a menu option for soupmashi. Fans of Jiro might know ninnikumashi, those magic words that get you a triple-size scoop of intense raw garlic. Here the mashi in question will get you extra soup.
If a ticket machine has an option for extra soup, you should get extra soup.
Refinement beyond expectations. This is a bowl that could be served to royalty alongside a kaiseki course. Very beautiful. Very flavorful. Very balanced.
The lack of toppings is the only downfall for this bowl. I can't help but think that this, plus some high quality trimmings, could be even better.
